Peel potatoes, cut into 1/4-inch slices, 1/4-inch strips and then cut each strip into 1/4-inch squares.
Blot the pieces carefully on a paper towel to remove moisture.
In a large skillet, melt butter; add the potato pieces and all seasonings.
Allow to pre-cook for about 10 minutes and remove from stove.
Put potato squares on a baking sheet, single layer and place in oven.
Bake for 45 - 60 minutes, turning at the half way point, or until potatoes are well browned and tender.
Notes
I generally forego the peeling and cutting, of the potatoes, and purchase two packages of the pre-cut potatoes found in the refrigerated section of local grocery stores.
