Breakfast Egg Muffins

Ingredients
  

  • 24 petite red potatoes, unpeeled
  • Cooking spray
  • 4 eggs
  • Salt and pepper, to taste
  • Bacon Bits
  • Cheddar cheese

Instructions
 

  • Pre-heat the oven to 400°F.
  • Place the potatoes in a microwave and cook for 4 minutes.
  • Spray the cups of a 12 cup mini-muffin pan.
  • Place two red potatoes in each of the mini-muffin pan cups.
  • Take a glass bottle or glass and smash the red potatoes while in the mini-muffin pan.
  • To each of the cups, in this order, add 1 tbsp. egg, salt, pepper, bacon bits and cheddar cheese.
  • Place in the pre-heated oven and bake for 12 minutes.
  • Remove from the oven and let stand for 3 – 5 minutes before removing from the muffin pan.
