Pre-heat the oven to 400°F.
Place the potatoes in a microwave and cook for 4 minutes.
Spray the cups of a 12 cup mini-muffin pan.
Place two red potatoes in each of the mini-muffin pan cups.
Take a glass bottle or glass and smash the red potatoes while in the mini-muffin pan.
To each of the cups, in this order, add 1 tbsp. egg, salt, pepper, bacon bits and cheddar cheese.
Place in the pre-heated oven and bake for 12 minutes.
Remove from the oven and let stand for 3 – 5 minutes before removing from the muffin pan.
