Breakfast Potatoes with Bell Peppers and Bacon
Ingredients
- 4 large potatoes, diced medium
- 3 medium bell peppers, mixed green and red, diced large
- ½ cup bacon, cooked crisp and roughly chopped
- ½ cup sharp cheddar, shredded
- 1 tbsp. all-purpose seasoning blend (see note)
- 1 tbsp. fresh herbs, your choice, chopped fine
- 1 tbsp. olive oil
- Salt and pepper, to taste
Instructions
- Par-cook potatoes in boiling water for 5 to 7 minutes or until fork tender; drain water and set aside.
- Pre-heat a cast-iron skillet, over medium-high heat, and add olive oil.
- Add peppers and sauté for 2 minutes.
- Add potatoes and sauté for another 2 minutes.
- Season with all-purpose seasoning, herbs, salt and pepper.
- Stir in bacon bits; stir and cook for another 2 minutes.
- Remove from heat and top with cheese.
- Set broiler on high.
- Put skillet in oven for 3 to 5 minutes, watchinig to ensure the potatoes do not burn.
- Serve with hot sauce and eggs prepared your way.
