Breakfast Potatoes with Bell Peppers and Bacon

Ingredients
  

  • 4 large potatoes, diced medium
  • 3 medium bell peppers, mixed green and red, diced large
  • ½ cup bacon, cooked crisp and roughly chopped
  • ½ cup sharp cheddar, shredded
  • 1 tbsp. all-purpose seasoning blend (see note)
  • 1 tbsp. fresh herbs, your choice, chopped fine
  • 1 tbsp. olive oil
  • Salt and pepper, to taste

Instructions
 

  • Par-cook potatoes in boiling water for 5 to 7 minutes or until fork tender; drain water and set aside.
  • Pre-heat a cast-iron skillet, over medium-high heat, and add olive oil.
  • Add peppers and sauté for 2 minutes.
  • Add potatoes and sauté for another 2 minutes.
  • Season with all-purpose seasoning, herbs, salt and pepper.
  • Stir in bacon bits; stir and cook for another 2 minutes.
  • Remove from heat and top with cheese.
  • Set broiler on high.
  • Put skillet in oven for 3 to 5 minutes, watchinig to ensure the potatoes do not burn.
  • Serve with hot sauce and eggs prepared your way.
