Par-cook potatoes in boiling water for 5 to 7 minutes or until fork tender; drain water and set aside.
Pre-heat a cast-iron skillet, over medium-high heat, and add olive oil.
Add peppers and sauté for 2 minutes.
Add potatoes and sauté for another 2 minutes.
Season with all-purpose seasoning, herbs, salt and pepper.
Stir in bacon bits; stir and cook for another 2 minutes.
Remove from heat and top with cheese.
Set broiler on high.
Put skillet in oven for 3 to 5 minutes, watchinig to ensure the potatoes do not burn.
Serve with hot sauce and eggs prepared your way.
