Broccoli Apple Salad
Ingredients
- 4 cups fresh broccoli florets
- ½ cup carrots, shredded
- ¼ cup red onion, diced
- 2 large Gala apples, finely chopped
- ½ cup pecans, coarsely chopped
- ½ cup dried cranberries
- ½ cup lite mayonnaise
- ½ cup low fat Greek yogurt
- 2 tbsp. lemon juice
- 1 tbsp. granulated sugar
- ¼ tsp. salt
- ⅛ tsp. black pepper
Instructions
- In a large bowl, combine the broccoli, carrots, red onion, apples, pecans and dried cranberries.
- In a separate bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, sugar, salt and pepper until smooth.
- Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
- If not serving immediatley, place in an air tight container and refrigerate for a few hours until ready to serve.
