Prepare the pasta (al dente) according to box instructions; remove from heat; drain; return to the pot.
In a separate skillet, over medium heat, cook ground beef until no longer pink; remove from heat; drain fat.
Combine ground beef with the pasta.
In a medium skillet, over medium heat, cook salt pork to render all its fat; remove from heat; remove from skillet; do not discard the fat; set aside.
In the same medium skillet, over medium heat, cook chopped onions and celery in the salt pork fat until tender.
Add the onions and celety to the pasta and ground beef; stir to combine.
Add the 2 cans of stewed tomatoes and salt pork; stir, heat and serve.
