Canadian Chop Suey

Ingredients
  

  • 1 box elbow macaroni, or pasta of choice
  • 1½-pounds lean ground beef
  • 1 large onion, diced
  • ¼-pound salt pork, diced
  • 2 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 2 15-ounce cans stewed tomatoes, undrained

Instructions
 

  • Prepare the pasta (al dente) according to box instructions; remove from heat; drain; return to the pot.
  • In a separate skillet, over medium heat, cook ground beef until no longer pink; remove from heat; drain fat.
  • Combine ground beef with the pasta.
  • In a medium skillet, over medium heat, cook salt pork to render all its fat; remove from heat; remove from skillet; do not discard the fat; set aside.
  • In the same medium skillet, over medium heat, cook chopped onions and celery in the salt pork fat until tender.
  • Add the onions and celety to the pasta and ground beef; stir to combine.
  • Add the 2 cans of stewed tomatoes and salt pork; stir, heat and serve.
