Cherry and Almond Crumble
Ingredients
For the Filling:
- 1-1/2 pounds cherries, rinsed and pitted
- 3 tbsp. granulated sugar
- 1 tbsp. cornstarch
- 1/2 tsp. ground cinnamon
- 1/2 tsp. vanilla extract
For the Crumble:
- 3/4 cup all-purpose flour
- 3/4 cup light brown sugar, packed
- 1/2 cup rolled oats
- 1/2 cup almonds, finely chopped
- 1/4 tsp. salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- Ice cream, optional
Instructions
To prepare the filling:
- Pre-heat oven to 375°F.
- Lightly butter a 9-inch round baking pan.
- In a medium bowl. combine the cherries, sugar, cornstarch, cinnamon, and vanilla; set aside while you make the crumble.
To prepare the crumble:
- In a medium bowl, combine the flour, brown sugar, oats, almonds, and salt; thoroughly combine.
- Add the butter and mix with a pastry blender, a fork, or your fingers until the mixture forms crumbs.
- Transfer the cherry mixture to the prepared pan.
- Sprinkle the crumble evenly over the cherry mixture.
- Place in pre-heated oven and bake 30 to 35 minutes, or until the filling is bubbly and the topping is golden brown.
- Serve warm, at room temperature, or chilled.
- Top with ice cream, optional
Notes
Try using a combination of different cherries. Just use your favorite or combine varieties. Also use them whole, but feel free to chop if you prefer.
