Cherry and Almond Crumble

Ingredients
For the Filling:
1-1/2 pounds cherries, rinsed and pitted
3 tbsp. granulated sugar
1 tbsp. cornstarch
1/2 tsp. ground cinnamon
1/2 tsp. vanilla extract
For the Crumble:
3/4 cup all-purpose flour
3/4 cup light brown sugar, packed
1/2 cup rolled oats
1/2 cup almonds, finely chopped
1/4 tsp. salt
1/2 cup unsalted butter, cold and cut into small cubes
Ice cream, optional
Instructions
To prepare the filling:
Pre-heat oven to 375°F.
Lightly butter a 9-inch round baking pan.
In a medium bowl. combine the cherries, sugar, cornstarch, cinnamon, and vanilla; set aside while you make the crumble.
To prepare the crumble:
In a medium bowl, combine the flour, brown sugar, oats, almonds, and salt; thoroughly combine.
Add the butter and mix with a pastry blender, a fork, or your fingers until the mixture forms crumbs.
Transfer the cherry mixture to the prepared pan.
Sprinkle the crumble evenly over the cherry mixture.
Place in pre-heated oven and bake 30 to 35 minutes, or until the filling is bubbly and the topping is golden brown.
Serve warm, at room temperature, or chilled.
Top with ice cream, optional
Notes
Try using a combination of different cherries. Just use your favorite or combine varieties. Also use them whole, but feel free to chop if you prefer.
