Chocolate Banana Bread

Ingredients
  

  • 3 ripe bananas, mashed
  • 3 eggs
  • ¼ cup pure maple syrup
  • 1 tsp. vanilla extract
  • ¼ cup cocoa powder
  • 1-½ cups all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • Chocolate chips
  • Walnuts or pecans, optional

Instructions
 

  • Pre-heat the oven to 350°F; grease and line an 8-½" x 4.5" loaf pan; set aside.
  • In a large bowl, combine the eggs, bananas, maple syrup and vanilla; gently stir to combine.
  • Add in everything else, except the chocolate chips; gently stir to combine,
  • Fold in the chocolate chips and walnuts/pecams, if using.
  • Pour the batter into the greased and lined loaf pan.
  • Top with more chocolate chips, if desired.
  • Place in the pre-heated oven and bake for 50 – 60 minutes or until a toothpick come out clean when inserted in the middle of the bread.
  • Remove from the oven and allow to cool in the pan for 10 minutes; remove and place on a wire rack to completely cool.
