Pre-heat the oven to 350°F; grease and line an 8-½" x 4.5" loaf pan; set aside.
In a large bowl, combine the eggs, bananas, maple syrup and vanilla; gently stir to combine.
Add in everything else, except the chocolate chips; gently stir to combine,
Fold in the chocolate chips and walnuts/pecams, if using.
Pour the batter into the greased and lined loaf pan.
Top with more chocolate chips, if desired.
Place in the pre-heated oven and bake for 50 - 60 minutes or until a toothpick come out clean when inserted in the middle of the bread.
Remove from the oven and allow to cool in the pan for 10 minutes; remove and place on a wire rack to completely cool.
