Ingredients
  

  • 1 pound ground beef
  • 2 carrots, peeled and sliced
  • 1-½ pounds potatoes, peeled and diced
  • 1 onion, chopped
  • 1 6 ounce can tomato paste,
  • 2 cups water
  • 1 tsp. onion powder
  • 2 tsp. garlic, minced
  • 1 tsp. oregano
  • Salt and pepper, to taste
  • 1 loaf crusty bread, optional

Instructions
 

  • Start by heating a skillet, over medium-high heat, and browning the ground beef until it’s fully cooked and develops a rich, golden-brown crust; this step not only enhances the flavor but also locks in the juices.
  • Once browned, drain excess fat to make the stew lighter and healthier without sacrificing taste.
  • Transfer the browned beef to the slow cooker to create a hearty base.
  • Layer on the diced potatoes, chopped onions and sliced carrots; stir the ingredients together to mix them evenly and prepare for the next step.
  • In a bowl, whisk together water, tomato paste, oregano, onion powder, minced garlic and a pinch of salt and pepper; stir until the tomato paste dissolves and forms a smooth mixture.
  • Pour the sauce over the meat and vegetables in the slow cooker, ensuring an even coating; stir gently to mix everything together.
  • Cover and set the slow cooker to low; simmer for 7 hours, allowing the flavors to meld beautifully and fill your home with a cozy aroma.
  • After the cooking time is up, give the stew a final stir to blend the flavors.
  • Ladle the hearty mixture into indiidual bowls and serve hot; air with a slice of crusty bread to soak up the delicious broth.
