Curry Spiced Roasted Red Pepper Hummus
Ingredients
- 2 cups canned chickpeas, drained
- 6 cloves garlic
- ⅓ cup tahini paste
- 1 tsp. garam masala spice mix
- Juice of one large lemon
- 3 tbsp. yellow curry powder
- 1 tsp. chili paste or ½ tsp. red chili powder
- 1 tbsp. fresh ginger root, finely minced
- Salt, to taste
- ¼ tsp. pepper
- ½ cup roasted red pepper, diced small
- 3 tbsp. chives, chopped
- Olive oil, for serving, optional
- Parsley, chopped, for serving, optional
Instructions
- Add the cooked chickpeas to a food processor and process until very creamy.
- Add the other ingredients, except the peppers and chives, and blend in well.
- Fold in the diced roasted pepper and chives.
- Traditionally served with drizzled olive oil and chopped parsley.
