Curry Spiced Roasted Red Pepper Hummus

Ingredients
  

  • 2 cups canned chickpeas, drained
  • 6 cloves garlic
  • ⅓ cup tahini paste
  • 1 tsp. garam masala spice mix
  • Juice of one large lemon
  • 3 tbsp. yellow curry powder
  • 1 tsp. chili paste or ½ tsp. red chili powder
  • 1 tbsp. fresh ginger root, finely minced
  • Salt, to taste
  • ¼ tsp. pepper
  • ½ cup roasted red pepper, diced small
  • 3 tbsp. chives, chopped
  • Olive oil, for serving, optional
  • Parsley, chopped, for serving, optional

Instructions
 

  • Add the cooked chickpeas to a food processor and process until very creamy.
  • Add the other ingredients, except the peppers and chives, and blend in well.
  • Fold in the diced roasted pepper and chives.
  • Traditionally served with drizzled olive oil and chopped parsley.
