Fresh Tomato Tart

Ingredients
  

  • One pie dough crust
  • 8 ounces Mozzarella or Italian Mix cheese, shredded
  • 1 tsp. dried basil leaves
  • 4 to 5 ripe tomatoes, sliced ½- inch thick
  • ½ cup cherry tomatoes, halved
  • Salt, to taste
  • Freshly ground pepper, to taste
  • Extra virgin olive oil

Instructions
 

  • Pre-heat the oven to 400°F.
  • Line a 10-inch removeable bottom tart pan with the pastry dough; alternatively, use a glass pie plate if a tart pan is not available.
  • Spread bottom of pastry with cheese; sprinkle with part of the basil.
  • Cover with tomato slices; arranging to cover as evenly as possible.
  • Sprinkle tomatoes with salt, pepper and basil.
  • Drizzle with the olive oil.
  • Place in the pre-heated oven and bake 30 to 40 minutes.
  • Remove from the oven; allow to cool for a few minutes; slice in wedges and serve warm or at room temperature.
