Pre-heat the oven to 400°F. 
Line a 10-inch removeable bottom tart pan with the pastry dough; alternatively, use a glass pie plate if a tart pan is not available.
Spread bottom of pastry with cheese; sprinkle with part of the basil. 
Cover with tomato slices; arranging to cover as evenly as possible. 
Sprinkle tomatoes with salt, pepper and basil.  
Drizzle with the olive oil. 
Place in the pre-heated oven and bake 30 to 40 minutes. 
Remove from the oven; allow to cool for a few minutes; slice in wedges and serve warm or at room temperature.
