Heavenly Cherry Pistachio Cheesecake Bars

Ingredients
  

For the Crust:

  • 1-½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted

For the Filling:

  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp. vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ½ pistachios, chopped
  • 1-½ cups cherry pie filling

Instructions
 

To prepare the crust:

  • Pre-heat the oven to 325°F.
  • In a medium bowl, mix graham cracker crumbs with the melted butter and press into the bottom of a lined 9 x 13-inch baking pan.
  • Place in the refrigerator and chill while preparing the filling.

To prepare the filling:

  • In a medium bowl, using an electric mixer, beat cream cheese with sugar until smooth.
  • Incorporate vanilla extract.
  • Add eggs, one at a time; stir in sour cream.
  • Spread the filling over the crust.
  • Dollop cherry pie filling and swirl gently with a knife.
  • Sprinkle chopped pistachios on top.
  • Place in the pre-heated oven and bake for 40 – 45 minutes or until set.
  • Remove from the oven and allow to cool to room temperature; then place in the refrigerator for at least 2 hours before serving.
