Heavenly Cherry Pistachio Cheesecake Bars
Ingredients
For the Crust:
- 1-½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
For the Filling:
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 tsp. vanilla extract
- 3 large eggs
- 1 cup sour cream
- ½ pistachios, chopped
- 1-½ cups cherry pie filling
Instructions
To prepare the crust:
- Pre-heat the oven to 325°F.
- In a medium bowl, mix graham cracker crumbs with the melted butter and press into the bottom of a lined 9 x 13-inch baking pan.
- Place in the refrigerator and chill while preparing the filling.
To prepare the filling:
- In a medium bowl, using an electric mixer, beat cream cheese with sugar until smooth.
- Incorporate vanilla extract.
- Add eggs, one at a time; stir in sour cream.
- Spread the filling over the crust.
- Dollop cherry pie filling and swirl gently with a knife.
- Sprinkle chopped pistachios on top.
- Place in the pre-heated oven and bake for 40 – 45 minutes or until set.
- Remove from the oven and allow to cool to room temperature; then place in the refrigerator for at least 2 hours before serving.
