In a medium bowl, using an electric mixer, beat cream cheese with sugar until smooth.
Incorporate vanilla extract.
Add eggs, one at a time; stir in sour cream.
Spread the filling over the crust.
Dollop cherry pie filling and swirl gently with a knife.
Sprinkle chopped pistachios on top.
Place in the pre-heated oven and bake for 40 - 45 minutes or until set.
Remove from the oven and allow to cool to room temperature; then place in the refrigerator for at least 2 hours before serving.
