Hog-tied Marinated Green Beans

Ingredients
  

  • Fresh Green Beans, approximately 10 – 12 per guest
  • Bacon or prosciutto
  • Toothpicks, soaked in water
  • 1 bottle Zesty Italian dressing
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions
 

  • Cut the stem ends off the beans.
  • Add 1 tablespoon salt to a pot of boiling water and then add the beans.
  • Cook the beans until they are crisp tender; approximately 5 minutes.
  • Meanwhile, prepare an ice bath for the beans; fill a large bowl with ice water, leaving enough room for the beans.
  • When the beans are cooked, drain them in a colander, then immediately place them in the ice bath to cool completely; drain the beans in the colander again and set aside.
  • Place green beans in a container.
  • Add ½ of the bottle of the Zesty Italian dressing; marinate overnight.
  • When ready to serve, pre-heat oven to 350°F.
  • Assemble the bundles; lay approximately 10 green beans, all facing the same direction, into a bundle and place in the center of the bacon or prosciutto; secure with a toothpick, if necessary; repeat; set bundles aside.
  • Place in baking dish and pour remainder of Zesty Italian dressing over the top.
  • Bake covered, for about 35 to 40 minutes
  • If using prosciutto, reduce baking time to about 10 – 15 minutes or until prosciutto is starting to get crispy.
