Honey Dijon Pasta Salad
Ingredients
For the Pasta:
- 3 cups pasta fusilli, penne, rotini, etc., cooked
- ½ cup red pepper, finely diced
- ½ cup cucumber, deseeded, diced small
- 3 tbsp. Parmesan cheese, finely grated
- ¼ cup pine nuts, toasted, optional
For the Honey Dijon Dressing:
- 1 lemon, juiced and rind finely grated
- 2 tbsp. whole grain Dijon mustard
- 2 tbsp. olive oil
- 3 tbsp. honey
- ½ tsp. dried oregano
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the pasta, red pepper, cucumber, cheese and pine nuts; mix to thoroughly combine.
- In a dressing shaker, add all ingredients and shake vigorously until completetely combined.
- Pour dressing over the salad; mix to combine; place in an airtight container and place in the refrigrator to chiil until ready to serve.
- Prior to serving, stir the salad to ensure all ingredients are covered with the dressing.
