Key West Crab Cakes
Ingredients
- 2/3 cup mayonnaise
- 5 egg yolks
- 2 tsp. lemon juice
- 2 tbsp. Worcestershire sauce
- 2 tsp. Dijon mustard
- 2 tsp. black pepper
- 1/4 tsp. salt
- 1/4 tsp. blackening seasoning
- 1/4 tsp. crushed red pepper flakes
- 1/2 cup crushed, chopped parsley
- 2 1/2 cups breadcrumbs
- 2-pounds crab meat
- All-purpose flour
- Olive oil
Instructions
- In a medium bowl, mix all ingredients together.
- Use your hands to make into 4-ounce patties
- Place flour in a shallow dish.
- Coat each crab cake with flour.
- Fry, in 1 inch of oil, until golden brown.
