Make-Ahead-Meatballs

Ingredients
  

  • 1 tsp. vegetable oil
  • 1 cup onion, finely chopped
  • 3-pounds ground chuck
  • 2 cups panko bread crumbs
  • 2 tbsp. dried parsley flakes
  • 2 tsp. dried Italian seasoning
  • 2 tsp. garlic salt
  • 1 tsp. ground black pepper
  • 3 large eggs, lightly beaten

Instructions
 

  • Pre-heat oven to 350°.
  • Line a rimmed baking sheet with aluminum foil.
  • Place a cooling rack on baking sheet; spray rack with non-stick cooking spray.
  • In a small skillet, heat oil over medium heat.
  • Add onion, and cook for 6 minutes or until tender.
  • Remove from heat and let cool for 15 minutes.
  • In a large bowl, combine ground chuck, cooked onion, bread crumbs and next 4 ingredients.
  • Add eggs, stirring to combine.
  • Shape mixture into 2-inch balls; place on prepared rack in pan.
  • Place in pre-heated oven and bake for 25 minutes or until cooked through.
  • Let cool completely and freeze in heavy-duty resealable plastic bags for up to 1 month.
