Pre-heat oven to 350°.
Line a rimmed baking sheet with aluminum foil.
Place a cooling rack on baking sheet; spray rack with non-stick cooking spray.
In a small skillet, heat oil over medium heat.
Add onion, and cook for 6 minutes or until tender.
Remove from heat and let cool for 15 minutes.
In a large bowl, combine ground chuck, cooked onion, bread crumbs and next 4 ingredients.
Add eggs, stirring to combine.
Shape mixture into 2-inch balls; place on prepared rack in pan.
Place in pre-heated oven and bake for 25 minutes or until cooked through.
Let cool completely and freeze in heavy-duty resealable plastic bags for up to 1 month.
