Mom’s Old Fashioned Boiled Molasses Pudding with Vanilla Sauce

Ingredients
  

For the Pudding:

  • 2-½ cups all-purpose flour
  • 1 tsp. butter or margarine
  • 2 tsp. granulated sugar
  • ½ cup molasses
  • 1 tsp. baking powder to each cup of flour
  • 1 tsp. allspice
  • 1 cup raisins
  • Enough water to make mixture smooth

For the Vanilla Sauce:

  • 1 cup granulated sugar
  • 1 tbsp. cornstarch
  • 2 cups boiling water
  • 1 cup whole milk
  • 1 tsp. vanilla
  • 1 tsp. butter or margarine

Instructions
 

To prepare the pudding:

  • In a large bowl, mix all ingredients together and place in a pudding bag (see notes).
  • Using kitchen twine, tie the bag as close as possible to the mixture; this keeps water from seeping into the pudding mixture while cooking. 
  • In a large pot, with a saucer on the bottom, set pudding bag on the saucer,
  • Cover completely with water; bring to a boil and cook, covered, for 2-½ hours.
  • Periodically check water to ensure pudding is covered; if you have to add water, heat cold water in microwave first, bring to a boil and then add to pot.
  • When pudding is cooked, remove from pot and immediately remove from bag and turn onto a serving platter.
  •  Allow to cool, for 10 to 15 minutes; then slice into 1-inch slices.

To prepare the vanilla sauce:

  • In a small saucepan, bring the water to a boil.  
  • In a small cup, mix sugar and cornstarch until thoroughly combined.
  • Add sugar and cornstarch to the boiling water; stir; return to a boil until thickened.
  • If mixture is too thick, add additional water.
  • Add milk to mixture and stir well.
  • Remove from heat; add vanilla and butter; mix well.
  • Serve hot or cold over pudding. 

Notes

To make a pudding bag simply cut the corner off an old pillow case.  From the point of the corner on the pillow case, the length of the two sides should be around 18-inches.  What you are left with is a triangle – two sides are 18-inches and the third side (along the top) depends on the size of the pillow case and it’s dimension is not important to construction of the pudding bag.
