New York Style Cheesecake

Ingredients
  

For the Crust:

  • 1-1/4 cups graham wafer crumbs
  • 1/4 cup granulated sugar
  • 1/4 cup butter, melted

For the Filling:

  • 5 8-ounce packages cream cheese, at room temperature
  • 2 tbsp. fresh lemon juice
  • 2 tsp. vanilla extract
  • 1-3/4 cups granulated sugar
  • 3 tbsp. all-purpose flour
  • 1/4 tsp. salt
  • 5 eggs
  • 2 egg yolks
  • 1/4 cup whipping cream

Instructions
 

To prepare the crust:

  • In a medium bowl. combine crumbs, sugar and butter; mix until thoroughly combined.
  • Press mixture into a 9-inch spring form pan.
  • Place in refrigerator until ready to use.

To prepare the filling:

  • Pre-heat oven to 500ºF.
  • In a large bowl. beat cream cheese, with electric mixer, until very smooth.
  • Blend in lemon juice and vanilla.
  • Sift sugar, flour and salt together and gradually beat into cheese; beat until creamy, smooth and light; about 5 minutes.
  • Beat in eggs and yolks, one at a time; blend in cream.
  • Pour into crust, place in oven and bake 12 minutes.
  • Reduce oven temperature to 200ºF.
  • Continue baking until tester inserted in center comes out clean; around 90 minutes.
  • Remove from oven and run a sharp knife around the edge of the pan.
  • Cool cake completely and refrigerate at least 24 hours before serving.
