Newfoundland Apricot Walnut Raisin Loaf
Ingredients
- 1-¼ cups all-purpose flour
- ½ cup sugar
- 2-½ tsp. baking powder
- ½ tsp. salt
- ½ cup dry apricots, chopped
- ¼ cup walnuts, chopped
- ½ cup raisins
- ¼ cup vegetable oil
- ½ tsp. vanilla
- ¾ cup milk
- 2 eggs
Instructions
- Pre-heat oven to 350°F.
To prepare the fruit:
- In a medium saucepan, combine apricots, raisins, and some water.
- Simmer very gently for 30 minutes; remove from heat and cool completely.
To prepare the loaf:
- In a medium bowl, combine all dry ingredients; mix thoroughly.
- In a separate bowl, mix vegetable oil, vanilla, milk and eggs.
- Add liquid to dry ingredients and thoroughly mix until all ingredients are incorporated; do not over mix; the batter will look lumpy.
To bake loaf:
- Pour batter into a well-greased and floured, or parchment lined, loaf pan.
- Place in oven and bake for 55 – 65 minutes or until toothpick inserted in center of loaf comes out clean.
- Remove from oven and let cool, on a wire rack, for 10 – 15 minutes, prior to removing from pan.
