Newfoundland Mice Cookies

Ingredients
  

  • ¼ cup butter, melted
  • 1 cup smooth peanut butter
  • 1 tsp. vanilla extract
  • 2 cups confectioners' sugar
  • 1 cup crispy rice cereal
  • 1-½ cups chocolate chips, melted in a double boiler

Instructions
 

  • In a mediaum bowl, beat together the butter, peanut butter, vanilla and confectioners' sugar until smooth.
  • Carefully fold in the rice cereal,
  • Roll into balls or small cigar shapes and freeze for a couple of hours before dipping in the melted chocolate.
  • Remove from the freezer and dip cookies in the melted chocolate.
  • Place dipped cookies on a parchment paper lined cookie sheet and chill until the chocolate sets.

Notes

Makes about 2 dozen cookies which freeze really well.

How do you keep the chocolate from melting so quick? I put them in the freezer but literally melt on my fingers just transferring them. Taste is delicious though!
