Patriotic Holiday Liberty Cobbler

Ingredients
  

For the Cobbler:

  • 1 cup strawberries, sliced
  • ¼ cup granulated sugar
  • 6 tbsp. butter
  • 1-½ cups all-purpose flour
  • 2-¼ tsp. baking powder
  • ¾ tsp. salt
  • 1-½ cups whole milk
  • ¾ cup granulated sugar

For the Blueberry Sauce:

  • 2 pints blueberries
  • ¼ cup water
  • ¼ cup granulated sugar
  • 1 tbsp. lemon juice 
  • Whipped cream

Instructions
 

To prepare the cobbler:

  • In a large bowl, pour sugar over strawberries and mix well; set aside and let macerate for 20 minutes.
  • Pre-heat oven to 350°F.
  • Put butter in a 9-inch x 3-inch ovenproof serving dish; place in the oven to melt.
  • In a medium bowl, mix together flour, baking powder and salt; stir in milk and sugar to make a batter.
  • Remove dish with melted butter from the oven and pour in the batter.
  • Arrange drained strawberries over the batter in a single layer; drizzle the juices from the berries on top.
  • Return the dish to the oven and bake until the batter is browned and has risen up and around the fruit; approximately 45 minutes.

To prepare the blueberry sauce:

  • Rinse and pick over blueberries.
  • Combine water and sugar in a saucepan; heat to the boiling point.
  • Place 1 pint of blueberries in the bowl of a food processor.
  • Process, turning the machine on and off about 4 times, until berries are coarsely pureed.
  • Add pureed blueberries to the sugar syrup; add lemon juice; bring back to a boil.
  • Cook about 2 minutes more.
  • Add remaining pint of whole berries, reserving a few for decoration.

To assemble and serve cobbler:

  • Serve blueberry sauce over the warm cobbler; top with whipped cream and reserved berries.
