Patriotic Holiday Liberty Cobbler
Ingredients
For the Cobbler:
- 1 cup strawberries, sliced
- ¼ cup granulated sugar
- 6 tbsp. butter
- 1-½ cups all-purpose flour
- 2-¼ tsp. baking powder
- ¾ tsp. salt
- 1-½ cups whole milk
- ¾ cup granulated sugar
For the Blueberry Sauce:
- 2 pints blueberries
- ¼ cup water
- ¼ cup granulated sugar
- 1 tbsp. lemon juice
- Whipped cream
Instructions
To prepare the cobbler:
- In a large bowl, pour sugar over strawberries and mix well; set aside and let macerate for 20 minutes.
- Pre-heat oven to 350°F.
- Put butter in a 9-inch x 3-inch ovenproof serving dish; place in the oven to melt.
- In a medium bowl, mix together flour, baking powder and salt; stir in milk and sugar to make a batter.
- Remove dish with melted butter from the oven and pour in the batter.
- Arrange drained strawberries over the batter in a single layer; drizzle the juices from the berries on top.
- Return the dish to the oven and bake until the batter is browned and has risen up and around the fruit; approximately 45 minutes.
To prepare the blueberry sauce:
- Rinse and pick over blueberries.
- Combine water and sugar in a saucepan; heat to the boiling point.
- Place 1 pint of blueberries in the bowl of a food processor.
- Process, turning the machine on and off about 4 times, until berries are coarsely pureed.
- Add pureed blueberries to the sugar syrup; add lemon juice; bring back to a boil.
- Cook about 2 minutes more.
- Add remaining pint of whole berries, reserving a few for decoration.
To assemble and serve cobbler:
- Serve blueberry sauce over the warm cobbler; top with whipped cream and reserved berries.
