Pork-Ramen Stir-Fry

Ingredients
  

  • 6 tbsp. Teriyaki marinade, divided
  • 1-pound boneless pork loin chops, cut into thin strips
  • 2 tsp. flour
  • 1/4 cup, plus 2 tbsp. water, divided
  • 2 3-ounce packages ramen noodles, any flavor
  • 3 tbsp. olive oil vinaigrette
  • 1 12-ounce package refrigerated pre-cut mixed stir-fry vegetables

Instructions
 

  • In a shallow dish, add 3 tablespoons marinade and meat; stir to evenly coat meat with marinade.
  • Refrigerate 30 minutes to marinate
  • In a small dish, mix remaining marinade with flour and 1/4 cup water until blended; reserve for later use.
  • Break apart noodles.
  • Discard seasoning packets.
  • Add to saucepan of boiling water; stir.
  • Cook 3 minutes; drain.
  • In a large non-stick skillet, over medium heat, heat 2 tablespoons olive oil vinaigrette.
  • Add vegetables; stir-fry 4 minutes
  • Stir in remaining water; bring to boil.
  • Cover; simmer on medium-low heat, 2 to 3 minutes or until vegetables are crisp-tender.
  • Spoon into bowl; set aside.
  • Drain meat; discard marinade.
  • Heat remaining vinaigrette in skillet on medium-high heat.
  • Add meat; stir-fry 3 minutes.
  • Return vegetables to skillet along with the noodles and reserved marinade mixture; stir-fry 2 to 3 min. or until heated through.
