Pumpkin Applesauce Muffins

Ingredients
  

  • ¾ cup canned pumpkin puree
  • ½ cup unsweetened applesauce
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 tsp. ground cinnamon
  • ½ tsp. ground ginger
  • ½ tsp. ground nutmeg
  • ½ tsp. salt
  • ⅓ cup vegetable oil
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1-½ cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder

Instructions
 

  • Pre-heat oven to 375°F.
  • Line muffin pan with muffin liners or spray with non-stick cooking spray; set aside.
  • In a large bowl, mix together the pumpkin, applesauce, both sugars, spices, and salt.
  • Beat in the oil, eggs, and vanilla extract.
  • Add the flour and sprinkle in the baking soda and baking powder.
  • Gently mix until fully incorporated; do not over mix.
  • Scoop the batter into the muffin pan cups, distributing evenly among all of the cups.
  • Place in oven and bake for 17 – 18 minutes or until toothpick inserted, in center, comes out clean or mostly clean.
  • Remove from oven; cool in pan 5 minutes and remove cups to a wire rack for further cooling.
