Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Ingredients
  

  • 1 8-ounce package linguini pasta
  • 2 tbsp. butter
  • ½-pound fresh mushrooms, sliced
  • ½ cup butter
  • 2 cloves garlic, minced
  • 3-ounces cream cheese
  • 2 tbsp. fresh parsley, chopped
  • ¾ tsp. dried basil
  • ⅔ cup boiling water
  • ½-pound shrimp, cooked

Instructions
 

  • Place a large pot, on the stove, and turn the heat to high.
  • Pour in water sufficient water to cover linguini, add salt and bring it to a boil.
  • Add the linguini and cook for 7 minutes or until al dente’; drain the water and rinse with cold running water to stop the cooking process.
  • Place a large skillet, on the stove, and turn the heat to medium-high.
  • Add tablespoons of butter and allow to melt.
  • Add the mushrooms and cook until tender; place the cooked mushrooms on a plate.
  • In the same skillet, add in 1/2 cup butter and allow to melt.
  • Add the minced garlic and sauté until aromatic.
  • Add the cream cheese and stir until melted.
  • Add basil and parsley; simmer for 5 minutes or until the sauce becomes smooth.
  • Add the cooked mushrooms and shrimp; allow to heat thoroughly.
  • Add the linguini and toss until completely coated with the sauce.
  • Remove from heat and serve.
