Southern Pineapple Casserole

Ingredients
  

  • 1 20-ounce can unsweetened pineapple chunks, drained
  • 1 20-ounce can unsweetened pineapple tidbits, drained
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar, packed
  • 6 tbsp. all-purpose flour
  • 2 tbsp. fresh lime juice
  • 8-ounces sharp cheddar cheese, grated
  • 40 round buttery Ritz crackers, crushed
  • 1/4 cup butter, melted

Instructions
 

  • Pre-heat oven to 350°F.
  • Lightly coat an 8-inch square, or other suitable baking dish, with cooking spray.
  • In a large bowl, stir together pineapple chunks, pineapple tidbits, granulated sugar, brown sugar, flour, and lime juice; fold in cheese.
  • Spoon mixture into prepared baking dish.
  • In a medium bowl, stir together crushed crackers and melted butter.
  • Sprinkle over pineapple mixture in baking dish.
  • Bake in pre-heated oven until top is golden brown and mixture is bubbling, 30 to 35 minutes, covering with aluminum foil after 25 minutes to prevent overbrowning.
  • Let stand 10 minutes; serve.
