Spicy Asian Peanut Pasta

Ingredients
  

  • 1-pound linguine pasta or pasta of choice
  • 1- ½ cups crunchy peanut butter
  • ⅓ cup red pepper seasoned rice vinegar
  • 3 tbsp. soy sauce
  • 1 tbsp. sriracha sauce, or to taste

Instructions
 

  • Bring a large pot of lightly salted water to a boil.
  • Cook linguine, at a boil, until tender yet firm to the bite, about 11 minutes; drain.
  • In a large bowl, whisk peanut butter, rice vinegar, soy sauce, and sriracha sauce until well combined.
  • Add linguine and toss to coat completely.

Notes

Try using a low-carb pasta for those watching their carbohydrate intake.
