Spicy Shrimp Tacos
Ingredients
- 4 tbsp. extra-virgin olive oil, divided
- 1-pound large shrimp, peeled and deveined
- 1 tbsp. shrimp seasoning
- ⅛ tsp. salt
- 1-½ cups red cabbage, thinly sliced
- 2 tbsp. fresh cilantro, chopped
- 2 tbsp. lime juice
- 8 6-inch corn tortillas, warmed
- 1 avocado, sliced
- ½ cup pico de gallo
Instructions
- In a large skillet, over high heat, heat 2 tablespoons oil.
- Sprinkle shrimp evenly with shrimp seasoning and salt.
- Add the shrimp to the pan; cook, stirring often, until opaque; 3 to 4 minutes.
- Remove from the heat; transfer to a plate.
- In a medium bowl, toss cabbage, cilantro, lime juice and the remaining 2 tablespoons oil until combined.
- Divide the shrimp among warm tortillas.
- Top with cabbage mixture, avocado and pico de gallo.
