Strawberry Granola

Ingredients
  

For the Dry Ingredients:

  • 1-pound rolled oats
  • 1 cup raw whole pecans
  • ½ cup raw whole almonds
  • ½ cup raw almonds, crushed
  • 1 cup dried cranberries
  • ¼ cup freeze-dried strawberries
  • 1-½ tsp. cinnamon
  • Pinch of salt

For the Wet Ingredients:

  • 1 cup coconut palm sugar
  • 1 cup maple syrup
  • 1 cup coconut oil
  • 2 tbsp. water, to bind the mixture
  • 1-½ tsp. vanilla extract

For the Topping:

  • 1-¼ cup freeze dried strawberries

Instructions
 

  • Pre-heat the oven to 325°F.
  • In a mixing bowl, assemble all the dry ingredients; mix well.
  • In a medium skillet, combine all the wet ingredients, except the vanilla extract; heat until the mixture starts to bubble.
  • Pour in vanilla extract; mix well.
  • Pour the syrup over the dry granola mix; stir well to coat.
  • The mixture should be moist and bind well; if needed, add 2 tablespoons of water.
  • Spread the mixture on a large baking tray and press it around evenly.
  • Place in the pre-heated oven and bake for 25 minutes or until the top is golden brown in color.
  • Remove from the oven and allow to cool.
  • Top with the remaining 1-¼ cups strawberries; mix well to combine.
  • Store it in an air-tight container; stays good for 2 months at room temperature.
