Strawberry Poppyseed Salad

Ingredients
  

For the Salad:

  • 4 cups fresh baby spinach
  • 2 cups chicken breast, cooked. sliced or shredded
  • 1 cup fresh strawberries, sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup crumbled feta or goat cheese
  • ¼ cup pecans or almonds, toasted
  • ¼ cup dried cranberries

For the Poppyseed Dressing:

  • ¼ cup olive oil
  • 2 tbsp. apple cider or white vinegar
  • 1 tbsp. honey or maple syrup
  • 1 tsp. Dijon mustard
  • 1 tbsp. poppy seeds
  • ¼ tsp. salt
  • Freshly ground black pepper, to taste

Instructions
 

To prepare the dressing:

  • In a small bowl or jar, whisk together the olive oil, vinegar, honey, Dijon mustard, poppy seeds, salt and pepper; set aside.

To assemble the salad:

  • In a large bowl, combine spinach, sliced chicken, strawberries, red onion, feta cheese, nuts and dried cranberries.

To dress and serve:

  • Drizzle the poppyseed dressing over the salad just before serving; toss gently to coat all ingredients evenly.
