
Strawberry Poppyseed Salad
Ingredients
For the Salad:
- 4 cups fresh baby spinach
- 2 cups chicken breast, cooked. sliced or shredded
- 1 cup fresh strawberries, sliced
- ¼ cup red onion, thinly sliced
- ¼ cup crumbled feta or goat cheese
- ¼ cup pecans or almonds, toasted
- ¼ cup dried cranberries
For the Poppyseed Dressing:
- ¼ cup olive oil
- 2 tbsp. apple cider or white vinegar
- 1 tbsp. honey or maple syrup
- 1 tsp. Dijon mustard
- 1 tbsp. poppy seeds
- ¼ tsp. salt
- Freshly ground black pepper, to taste
Instructions
To prepare the dressing:
- In a small bowl or jar, whisk together the olive oil, vinegar, honey, Dijon mustard, poppy seeds, salt and pepper; set aside.
To assemble the salad:
- In a large bowl, combine spinach, sliced chicken, strawberries, red onion, feta cheese, nuts and dried cranberries.
To dress and serve:
- Drizzle the poppyseed dressing over the salad just before serving; toss gently to coat all ingredients evenly.
