Strawberry Poppyseed Salad

Ingredients
For the Salad:
4 cups fresh baby spinach
2 cups chicken breast, cooked. sliced or shredded
1 cup fresh strawberries, sliced
¼ cup red onion, thinly sliced
¼ cup crumbled feta or goat cheese
¼ cup pecans or almonds, toasted
¼ cup dried cranberries
For the Poppyseed Dressing:
¼ cup olive oil
2 tbsp. apple cider or white vinegar
1 tbsp. honey or maple syrup
1 tsp. Dijon mustard
1 tbsp. poppy seeds
¼ tsp. salt
Freshly ground black pepper, to taste
Instructions
To prepare the dressing:
In a small bowl or jar, whisk together the olive oil, vinegar, honey, Dijon mustard, poppy seeds, salt and pepper; set aside.
To assemble the salad:
In a large bowl, combine spinach, sliced chicken, strawberries, red onion, feta cheese, nuts and dried cranberries.
To dress and serve:
Drizzle the poppyseed dressing over the salad just before serving; toss gently to coat all ingredients evenly.
