Combine apples, honey and water in a small saucepan.
Cook for about 15 to 20 mins over medium-low heat.
Drain the apples; set aside.
Pre-heat the oven to 350°F and thoroughly grease and flour a 9-inch springform pan.
In a small bowl, sift together flour, baking soda, salt, cinnamon and nutmeg.
In a large bowl, beat butter and sugar until smooth; add eggs, one at a time, followed by the vanilla.
Add the sifted dry ingredients and use a spatula to fold them.
Using a spatula or wooden spoon to transfer ¾ of the batter batter into the prepared pan – do not pour it iinto the pan; use an angled spatula to even the top.
Add the drained apples and try to arrange them evenly.
Randomly place the remaining batter on top.
Transfer the batter to the prepared pan; place in the pre-heated oven and bake for 40 – 45 minutes or until it turns golden on top and a toothpick comes out clean when inserted.
Remove from the oven and allow to cool on a wire rack.
