Swedish Apple Cake

Ingredients
  

For the Swedish Apple Cake:

  • 4 tbsp. honey
  • 4 tbsp. water
  • 1-½ cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1-½ tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ cup butter, room temperature
  • 1-⅔ cups granulated sugar
  • 2 eggs
  • 1-½ tsp. vanilla extract
  • 3 cups Granny Smith apples, peeled and diced
  • ¼ cup pecans or walnuts, chopped, optional

For the Caramel (Optional):

  • ¾ cup brown sugar
  • 1 tbsp. whole milk
  • 2 tbsp. butter

Instructions
 

To prepare the Swedish apple cake:

  • Combine apples, honey and water in a small saucepan.  
  • Cook for about 15 to 20 mins over medium-low heat.  
  • Drain the apples; set aside.
  • Pre-heat the oven to 350°F and thoroughly grease and flour a 9-inch springform pan.
  • In a small bowl, sift together flour, baking soda, salt, cinnamon and nutmeg.
  • In a large bowl, beat butter and sugar until smooth; add eggs, one at a time, followed by the vanilla.
  • Add the sifted dry ingredients and use a spatula to fold them.
  • Using a spatula or wooden spoon to transfer ¾ of the batter batter into the prepared pan – do not pour it iinto the pan; use an angled spatula to even the top.
  • Add the drained apples and try to arrange them evenly.
  • Randomly place the remaining batter on top.
  • Transfer the batter to the prepared pan; place in the pre-heated oven and bake for 40 – 45 minutes or until it turns golden on top and a toothpick comes out clean when inserted.
  • Remove from the oven and allow to cool on a wire rack.
