Sweet Potato Fries

Ingredients
  

For the Sweet Potato Fries:

  • 1 large sweet potato
  • 2 tbsp. olive oil
  • 1 tbsp. fresh rosemary, chopped
  • 1 tsp. salt
  • 1 tsp. pepper

For the Greek Yogurt Chive Dip:

  • 1 cup plain Greek yogurt
  • 1 tbsp. lemon juice
  • 2 tbsp. chives
  • ¼ tsp. salt
  • ¼ tsp. pepper 

Instructions
 

To prepare the sweet potato fries:

  • Pre-heat oven to 425°F.
  • Cut sweet potato into fries.
  • In a large bowl, combine fries, olive oil, rosemary, salt and pepper; mix thoroughly.
  • On a baking sheet, lined in parchment paper, place fries in a single layer.
  • Bake for 20 – 25 minutes, flipping halfway through.

To prepare the Greek yogurt chive dip:

  • In a small bowl, combine all dip ingredients.
  • Set aside, in the refrigerator, until ready to use.

Notes

This recipe is easily modified to use multiple sweet potatoes if you are serving a large group.  Simply increase all ingredients, one for one, for each additional potato you decide to use.
