In a large bowl, combine fries, olive oil, rosemary, salt and pepper; mix thoroughly.
On a baking sheet, lined in parchment paper, place fries in a single layer.
Bake for 20 - 25 minutes, flipping halfway through.
To prepare the Greek yogurt chive dip:
In a small bowl, combine all dip ingredients.
Set aside, in the refrigerator, until ready to use.
Notes
This recipe is easily modified to use multiple sweet potatoes if you are serving a large group. Simply increase all ingredients, one for one, for each additional potato you decide to use.
