
Taco Ranch Bites
These make about 75 bite-sized appetizers – perfect for feeding a crowd or having plenty for leftovers.
Ingredients
- 1-pound lean ground beef
- One 1-ounce package taco seasoning mix
- 1 10-ounce can Rotel Diced Tomatoes and Green Chilies, with juice
- 2 cups sharp cheddar cheese, grated
- 1 8-ounce bottle ranch dressing
- 5 15-count packages frozen phyllo cup shells, frozen
Instructions
- Pre-heat the oven to 350°F.
- In a large skillet, over medium heat, brown the ground beef until fully cooked and no longer pink.
- Remove fromt the heat; drain excess fat that accumulates; return to heat.
- Stir in the taco seasoning mix and the diced tomatoes with green chiles, including juice.
- Allow the mixture to simmer for about 5 minutes so the flavors can meld together.
- In a large bowl, mix together the grated cheddar cheese and ranch dressing until well combined.
- To the bowl, add the seasoned taco meat; stir until the ingredients beome a cheesy mixture.
- Place a generous dollop of taco ranch mixture into each frozen phyolo shell; place filled shells on a large baking tray.
- Place in the pre-heated oven for 10 to 13 minutes or until the filling is hot and bubbly and the shells are golden and crispy.
- Remove from the oven and allow to cool for just a minute or two before serving warm or allow to come to room temperature and then serve.
