Taco Ranch Bites

These make about 75 bite-sized appetizers - perfect for feeding a crowd or having plenty for leftovers.

Ingredients
  

  • 1-pound lean ground beef 
  • One 1-ounce package taco seasoning mix 
  • 1 10-ounce can Rotel Diced Tomatoes and Green Chilies, with juice
  • 2 cups sharp cheddar cheese, grated 
  • 1 8-ounce bottle ranch dressing
  • 5 15-count packages frozen phyllo cup shells, frozen

Instructions
 

  • Pre-heat the oven to 350°F.
  • In a large skillet, over medium heat, brown the ground beef until fully cooked and no longer pink.
  • Remove fromt the heat; drain excess fat that accumulates; return to heat.
  • Stir in the taco seasoning mix and the diced tomatoes with green chiles, including juice.
  • Allow the mixture to simmer for about 5 minutes so the flavors can meld together.
  • In a large bowl, mix together the grated cheddar cheese and ranch dressing until well combined.
  • To the bowl, add the seasoned taco meat; stir until the ingredients beome a cheesy mixture.
  • Place a generous dollop of taco ranch mixture into each frozen phyolo shell; place filled shells on a large baking tray.
  • Place in the pre-heated oven for 10 to 13 minutes or until the filling is hot and bubbly and the shells are golden and crispy.
  • Remove from the oven and allow to cool for just a minute or two before serving warm or allow to come to room temperature and then serve.
