Using butter, grease generously a 9-inch by 13-inch baking dish.
Placed cubed/sliced bread into the dish.
In a medium bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla, cinnamon and salt.
Pour evenly over the bread; gently press down to all bread is submerged.
Cover with aluminum foil or plastic wrap, place in the refrigerator for at least 4 hours or, ideally, overnight.
In the morning, remove the French Toast from the refrigerator; remove the aluminum/plastic wrap.
Pre-heat the oven to 350°F.
Using a microwave safe dish or saucepan melt the unsalted butter in the microwave or on the stove top.
Add the brown sugar and cinnamon; stir to ensure completely combined.
Evenly spread this mixture over the top of the French toast.
Place in the pre-heated oven and bake, uncovered, for 35-50 minutes or until the top is golden brown and the center is set.
Remove from the oven and allow it to rest for 10 minutes.
Prior to serving, sprinkle with confectioners' sugar and pour maple syrup over the top.
