Air Roasted Baby Carrots with Honey

Ingredients
16-ounces baby carrots
2 tsp. olive oil
A sprinkle of salt
¼ tsp. pepper
1-½ tbsp. butter, melted
1 tbsp. honey
1 tbsp. parsley, dill or basil
Instructions
In a medium bowl, toss cleaned carrots with olive oil, salt and pepper.
Pre-heat the air fryer, if necessary, to 400°F.
Arrange carrots in an even layer in the air fryer rack or basket.
Roast carrots for about 15 minutes or until browned and the desired tenderness has been reached.
They do not have to be flipped.
Remove from air fryer when roased; set aside.
In a small bowl, mix together melted butter, honey and fresh herbs.
Toss the carrots with the butter mixture and sprinkle on extra herbs and/or salt and pepper, if desired.
Notes
Use regular large size carrots, if desired, but cut into even chunks that are 1 to 2 inches in length.
