Apple Salad with Vinaigrette

Ingredients
Salad Dressing:
1 tbsp. extra-virgin olive oil
1 tbsp. balsamic vinegar
1 tsp. minced scallion whites
1 tsp. sugar
1 tsp. Dijon mustard
Pinch of salt
Salad:
1 Honey crisp apple, cored and cubed
½ cup green or red seedless grapes, halved
¼ cup pecans, chopped and toasted
2 tbsp. sliced scallion greens
2 tbsp. aged sharp white Cheddar, cut into chunks
Romaine lettuce, optional
Instructions
To make the vinaigrette:
Whisk together the oil, vinegar, scallion whites, sugar, Dijon and salt.
To make the salad:
Toss apple, grapes, pecans and scallion greens.
Add vinaigrette.
Garnish with cheddar.
Serve on romaine lettuce.
