Blue Ribbon Pumpkin Raisin Bread

Ingredients
  

  • 1-½ cups granulated sugar
  • ½ cup butter, softened
  • 2 eggs
  • 1 cup pumpkin
  • ⅓ cup water
  • 1-¾ cups all-purpose flour
  • ¼ tsp. baking powder
  • 1 tsp. baking soda
  • ¾ tsp. salt
  • ½ tsp. cinnamon
  • ¼ tsp. ground cloves
  • ½ tsp. pumpkin pie spice
  • ½ cup raisins

Instructions
 

  • Pre-heat the oven to 350°F and grease a 9" x 5" loaf pan.
  • In a large bowl, add granulated sugar and butter; using an electric mixer, cream together until thoroughly combined.
  • Add eggs.
  • Add pumpkin and water; mix well to combine.
  • Add all the dry ingredients; mix to moisten.
  • Be careful to not over-beat.
  • Fold in the raisins.
  • Pour into the greased loaf pan.
  • Place in the pre-heated oven and bake 1 hour; when a toothpick comes out clean the bread is done.
  • Remove from the oven and allow to cool in the pans for 15 minutes.
  • Then remove from the pans, place on a wire rack and allow to cool completely.
