Pre-heat the oven to 400°F.
If needed, clean and trim the Brussels sprouts; cut in halves; dry the sprouts very well before cooking; place in an oven safe dish.
Add the garlic, Parmesan cheese, salt and pepper, followed by the olive oil; toss to coat.
Place in the pre-heated oven and roast, uncovered, for 20 to 25 minutes until crisp, brown and caramelized on the outside and tender on the inside.
Remove from the oven and serve with more grated cheese.
