Caramel Apple Crisp Cheesecake

Ingredients
For the Crust:
¼ cup brown sugar
1 cup graham cracker crumbs
¾ cup rolled oats
½ cup melted butter, melted
For the Cheesecake:
2 8-ounce packages cream cheese, softened
2 tbsp. corn starch
¼ cup brown sugar
¼ cup white sugar
⅛ tsp. ginger
2 tsp. vanilla extract
½ tsp. cinnamon
For the Crisp Topping:
¼ cup all-purpose flour
¼ cup rolled oats
¼ cup brown sugar
½ tsp. cinnamon
2 tbsp. coconut oil
2 large apples, peeled and thinly sliced
For Other Toppings:
Whipped Cream
Caramel Topping
Instructions
To prepare the crust:
Pre-heat oven to 350°F.
In a mixing bowl, combine brown sugar, graham cracker crumbs, rolled oats and melted butter together.
Press crust mixture inside the bottom of a 9 or 10-inch spring form pan.
Bake for 5 minutes; remove from oven to cool.
To prepare the cheesecake:
In the bowl of an electric mixer, blend together cream cheese, cornstarch, brown sugar, white sugar, ginger, vanilla extract and cinnamon.
Once well combined, pour on top of graham cracker and oats crust.
To prepare the apple crisp topping:
In a medium bowl, combine all apple crisp topping ingredients except apples; mix well.
To complete preparation and bake cheesecake:
Once crust has cooled completely, arrange the thinly sliced apples on top of the cheesecake in a single layer.
Bake for 40 - 50 minutes.
Once done cooking, cool for 15 minutes, then refrigerate overnight.
When ready to serve, top with whipped cream and caramel topping, if desired.
