Chex Scotcheroo Stack

Ingredients
For the Cereal Layer:
12 cups Chex cereal, your choice, mix different flavors of Chex
2 cups light corn syrup
2 cups granulated sugar
2 cups creamy peanut butter
For the Topping:
1 cup creamy peanut butter
1 cup chocolate chips
1 cup butterscotch chips
Instructions
To prepare the cereal layer:
Line large trays or cookie sheets with parchment or wax paper.
Measure Chex cereal into a large heat proof bowl.
In a saucepan, over medium heat, combine corn syrup and sugar.
Bring to boil then remove from heat; stir in peanut butter until smooth.
Pour over cereal and gently fold together until cereal is completely covered.
Using a large ice cream scoop, scoop out 30 stacks onto prepared trays.
When cooled and set, prepare the topping.
To prepare the topping:
In a microwave-safe bowl, add peanut butter, chocolate chips and butterscotch chips.
Microwave on 50% power for 3 to 4 minutes; stirring every 30 seconds until melted together and smooth.
Spoon 1 tbsp. of the mixture over each stack.
To assemble the Chex scotcheroo stack:
Let set at room temperature or put in the refrigerator to speed up the process.
Notes
Mixture can also be pressed into a sprayed sheet pan; then drizzle topping over the top; cut into bars.
