Cowboy Cornbread Casserole

Ingredients
  

  • 2 packs cornbread mix
  • 1-½ pounds ground beef
  • 1 10-ounce can Rotel
  • 1 15.25-ounce can whole kernel corn
  • 1 15-ounce can ranch style beans
  • 1 cup chedar cheese, shredded
  • 1 1-ounce pack taco seasoning
  • Cheese, sour cream, salsa, etc., optional

Instructions
 

  • In a medium bowl, mix cornbread according to package instructions; set aside
  • Grease a 9 by 13-inch baking pan; set aside
  • Pre-heat the oven 425°F.
  • In a medium skillet, over medium-high heat, brown the ground beef; remove from the heat and drain.
  • Add the taco seasoning, undrained can rotel, undrained ranch style beans and drained corn.
  • Simmer for about 5 minutes.
  • Stir into the cornbread mix; mix in shredded cheese; stir to completely combine.
  • Pour into the prepared dish.
  • Place in the pre-heated oven and bake approximately 25 to -30 minutes until toothpick comes out clean.
  • Remove from the oven and top with more cheese, sour cream, salsa or whatever your heart desires.
