Crock Pot French Onion Meatloaf
This crock pot French Onion Meatloaf turns a humble classic into something truly special; juicy beef, savory onions and melted cheese.
For the Meatloaf:
- ¼ cup whole milk
- 2 eggs
- ½ tsp. garlic powder
- ½ tsp. black pepper
- 1-½ pounds lean ground beef
- 1 packet dry French onion soup mix
- ½ cup plain breadcrumbs
- 1 tbsp. Worcestershire sauce
- ¼ cup fresh parsley, chopped
For the Topping:
- 1 cup onions, sautéed until soft and golden
- 1 cup Swiss cheese, shredded or sliced
- Extra fresh parsley, chopped, optional
To perpare the meatloaf:
- In a large bowl, combine ground beef, French onion soup mix, breadcrumbs, milk, eggs, Worcestershire sauce, garlic powder, pepper and parsley; mix until just combined; best to not overwork the meat.
- Shape the meat mixture into a loaf and place it in the crock pot which has been lined with parchment paper or sprayed with non-stick cooking spray for easy cleanup.
- Top the meatloaf with the caramelized onions.
- Set the crock pot to low; cover and cook on 6 to 7 hours or high for 3 to 4 hours; when the internal temperature reaches 160°F the meatloaf is done cooking; do not turn off the crock pot.
- About 10 to15 minutes before serving, sprinkle or lay Swiss cheese over the top.
- Cover the crock pot and allow the cheese to melt until gooey. .
- Serve with your favorite vegetable(s).
Variation suggestions for the Crock Pot French Onion Meatloaf:
1. Make it saucy: Add a splash of beef broth or a spoonful of onion gravy to the crockpot for extra moisture.
2. Not a fan of Swiss?: try provolone, mozzarellaor or Gruyère.
3. More French Onion flavor: stir in sautéed mushrooms.
