Holiday Breakfast Frittata

Ingredients
1 dozen large eggs
2 tbsp. water
1/4 cup olive oil
4 ounces prosciutto, diced
3 large potatoes, peeled and sliced
1 cup Gruyere cheese, fresh grated
2 scallions or shallot stalks, sliced thin, for garnish
1 tsp. kosher salt
1/2 tsp. white pepper
Instructions
Pre-heat oven to 400°F
Heat olive oil in large oven safe 9-inch pan, or cast iron if available, over medium heat.
Add prosciutto or ham and sauté; add potatoes and sauté more; till both are browned and softened.
Remove from heat.
Spread around in the pan evenly and set aside.
In a bowl whisk eggs and water with salt and pepper.
Sprinkle Gruyere atop potatoes and prosciutto and allow for cheese to start to melt.
Pour the egg mix into the pan and place in oven.
Bake for 8 to 10 minutes or until set.
Cool for 5 to 10 minutes and sprinkle with scallion or shallot garnish.
Notes
Ham can be substituted for the prosciutto.
